You ride beneath almond and olive terraces, the tarmac flicking between smooth asphalt and older concrete patches on steeper stretches. Traffic is light and the road narrows as you rise, some pines cover giving way to rockier exposures and sharp limestone ridges. One moment you’re nestled between green slopes, the next you’re on the fringe of bare rock faces and clear vistas back to the valley floor.
